This casserole has the Nicola potato in it which many scientists call the “slimming potato”. It has a low GI number which means that a gradual release of glucose will enter the blood stream as the potato is digested. As the rate is slower than other potatoes you will feel fuller for longer. The other reason it is a great option for stews, is because it maintains its structure more so than other potatoes.
Ingredients
Serves: 4
500g Organic Free Range Chicken Thigh Fillets, cut into small pieces
8 Small Organic Nicola Potatoes, peeled and diced
2 Organic Carrots, peeled and diced
100g Organic Fresh Green Peas
100g Organic Green Beans, chopped in thirds
1 Organic Celery Stalk (leaves can be included), diced
½ Bunch Fresh Organic Oregano, finely chopped
1 Tablespoon of Celtic Sea Salt
50mls Extra Virgin Olive Oil
Method
Preparation Time: 10 minutes
Cooking Time: 30 minutes
- Place chicken in a non-stick saucepan and brown. While this takes place, season potatoes and vegetables with oregano, salt and 2 tablespoons of olive oil.
- Remove chicken when golden brown and add the potatoes and vegetables into the same saucepan. Add 100mls of warm water and simmer on medium heat for 20 minutes.
- Add chicken back into the saucepan, add extra water if needed and simmer for another 10-15 minutes until the caramelised juices and water has turned into a thick sauce.
- Serve while hot and drizzle with sauce from the saucepan.
